Water is the most important ingredient in beer, and all Wells & Young's ales share an enviable natural advantage over other bitters. Wells & Young's bitters are uniquely brewed using pure mineral water from an independently accredited source; the brewery's own well.
The purity and consistency of our water results from many years of natural percolation through clays and oolitic limestone with an ideal mineral balance until it finds its way to aquifers deep under Bedfordshire, into which the brewery's well, originally sunk by Charles Wells himself, reaches.

This wonderful natural resource demands the finest of other ingredients. As a result we also use only the most flavoursome part of the ripest hops, which are sampled by hand and our malts are carefully crushed rather than ground. This helps to bring out the full flavour and colour of the beer.

Furthermore, our Master Brewer insists on employing the ‘Holy Brewing’ method, fermenting these fine ingredients for a full 7 days, delivering the consistency and character that drinkers of Wells & Young's beers rightly know and trust.
